What workflow alternatives for writing science are there apart from LaTeX to PDF?

Disclaimer. I am an Ubuntu user and have never used OS X. Tto receive better and more focused replies, it would have been better had you mentioned why you want to move away from LaTeX + PDF. I use LaTeX + PDF for all the things that you have mentioned. Since you mentioned that for research papers you do not wish to change, therefore that I will neglect. For writing other documents also, if t contain scientific/math content with references etc, then still LaTeX should be the preferred choice. For general note-taking purposes, you can use a word processor (like Free Office Suite). Other good options can be The workspace for your life’s work (evernote). The advantage with evernote is that you can take notes in a desktop application or any web browser. It syncs with your other devices also and is pretty much OS-independent. You can share those notes with anyone you like. Being mobile friendly, it helps you take notes on the fly. Similar capabilities are available for google notes also. Meet Google Keep – Save your thoughts, wherever you are. But it does not have a desktop application (I think). But it has advantage of google-way of doing things. Sharing is better (according to me) as compared to evernote. I tried html + MathJax but it did not work for me for notes etc. Sharing is also a problem. If I want to share the html file with students, then either the file has to acess MathJax online or through a tediously-copying distributable files.

So I think to use Mathias for notes is quite a solution. But that has the disadvantage of being a bit more complex to use, depending on how much you want to share.   It is a bit slower than other options, but that is a problem of its own. It has to connect to a server of your choice and store the notes (as PDF) on that server. So it needs some resources.   I could not test it (for all the above reasons) but it looks easy enough to use to do that. But if you have experience with word processors, you may not find it too confusing. It has quite a few options you may need to know about. If the documents are not very big then you can save the notes as an image. That also saves on bandwidth and on disk space.   The advantage with it.
